Versatile Potatoes

Below are some ideas to refresh your menu options without breaking the budget. All of the ideas are an addition to the classic mashed potato recipe.

*Classic Mashed Potatoes

Mix butter and milk or 1/2 & 1/2 cream into potatoes; season with salt and freshly ground black pepper.

Sweet Pepper Mash

Fold into mash roasted red bell peppers, olive oil, salt, freshly ground black pepper and dried oregano.

*Saffron Mash

Add saffron to the water when boiling peeled potatoes or infuse the saffron in the milk or cream before adding the liquid to the mash; season with salt and freshly ground black pepper.

*Pesto Mash

Boil green beans for one minute; drain and cut into one-inch pieces. Add pesto, green beans to mash, amalgamate and sprinkle mash with freshly grated parmesan cheese.

*Herb Mash

Puree parsley, basil, chives, mint, cilantro or any other soft herbs in a food processor with olive oil and add to mash.

*Garlic Mash

Roast garlic and squeeze the flesh out of their skins, crush well and stir garlic into the mash.

*Cheese Mash

Stir in one type of cheese like Fontina or Gorgonzola or add different types of cheese to a mash to create a signature flavour.

*Wild Mushroom Mash

Chop up button, oyster and cremini mushrooms, sautee with onions and add to mash.

Sun-dried Tomato Mash

Chop up sun-dried tomatoes and stir into mash adding olive oil and dried oregano.

Roasted Onion Mash

Sautee onion gently with olive oil, let cool slightly and add to mash.
