Stuffed Potato Rose
 
Ingredients: 

Potatoes (5-6 large, yellow)

Mozzarella (2 cups, shredded)

Italian Seasoning (1 Tbsp)

Butter (1/2 cup melted)

Garlic (3 cloves, minced)

Parsley (fresh, 2 Tbsp, finely chopped)

 

Instructions:

  1. Preheat your grill or oven to 400 degrees. 
  2. Using a small saucepan, melt your butter, garlic, chopped parsley, and have it ready.  
  3. Grate your cheese and set aside. 
  4. Once you start slicing your potatoes you want to assemble promptly. Using a mandoline, thinly slice your Ontario grown potatoes. 
  5. Next, arrange your potatoes in a row, overlapping them tightly (leave about 1" space in between). Spread a thin layer of mozzarella cheese and sprinkle Italian seasoning. Make approximately 6-8 lines of potatoes ahead of time so you can continually keep rolling your potato rose. Have your medium sized cast iron pan ready. You can also use a small square pan if you have one.
  6. Roll each line onto itself, pick up the bundle, and continue rolling each line. Place into your pan. 
  7. Drizzle any remaining cheese and the melted garlic butter. 
  8. Place into your grill or oven for 45 minutes to 1 hour or until your potato pedals are fork tender.  
  9. Enjoy!
